High Protein Ranch Salad

Ingredients
  

  • 2 tbsp Justo's Plant-Based Ranch
  • 1/2 brick smoked tofu
  • 1/3 cup cucumber
  • 1/4 cup chickpeas
  • 1 tsp olive oil
  • 1 tbsp hot sauce
  • 1 slice bread
  • 1 tsp red wine vinegar
  • 1/4 tsp garlice powder
  • 1/8 tsp salt

Instructions
 

  • Preheat oven to 350 F and line a baking tray with parchment paper

To make buffalo chickpeas:

  • Add chickpeas, 1 tsp olive oil and 1 tbsp hot sauce in a bowl, toss to combine
  • Add seasoned chickpeas to baking tray on one side, set aside

To make croutons:

  • Chop your bread into cubes and add to a mixing bowl with 1 tsp olive oil, 2 tsp red wine vinegar, ¼ tsp garlic powder and ⅛ tsp salt, toss to combine
  • Add seasoned bread cubes to the baking tray with the chickpeas
  • Place baking tray in oven and bake chickpeas and croutons for 10-12 minutes
  • Add everything to a bowl and toss to combine
  • Enjoy a satisfying, high protein, creamy, vegan salad!
