Baked Truffle Hummus Pasta

Quick and easy oven-roasted pasta dish made with Justo's Truffle Hummus, your choice of pasta, and bursting cherry tomatoes!

- 1 lb pasta, of choice
- 1/2 cup olive oil extra virgin
- 1/2 cup Justo's Truffle Hummus
- 1 cup cherry tomatoes
- 4 cloves garlic
- 1 cup spinach
- 1/2 cup sun dried tomatoes
- dried basil, or fresh (chopped)
- pre-roasted chickpeas
- nutritional yeast
- Parmesan cheese, optional
- fresh sage leaves
- lemon
- salt and pepper, to taste
Preheat oven to 400°F
Start with Justo's Truffle Hummus in the centre of an oven safe dish, surround with cherry tomatoes and garlic. Cover with olive oil and dried basil. Bake for 30 minutes.
While the dish is cooking, get your noodles started. Cook according to package directions. **Make sure to save some pasta water before straining
After the 30 minutes has elapsed, remove the dish from the oven and crush the tomoatoes and garlic with a fork. Add a tbsp of pasta water, sprinkle nutritional yeast and optional Parmesan cheese. Combine until creamy. Add of each, if desired.
Stir in the cooked pasta, chopped spinach, and sun dried tomatoes.
Add optional pre-roasted chickpeas on top. Bake for 10 minutes.
Remove from oven, add some fresh sage leaves and a squeeze of lemon. Enjoy!
